Mediterranean Calzone
(from Travel Light-Eat Heavy by Bill McCartney)

Ingredients:
  • 1 Pita
  • 2 oz Pepperoni rounds (25-30 slices)
  • 1 oz Mozzarella cheese stick
  • 1 tbsp Parmesan cheese
  • 1 tsp Italian herbs
  • 1-2 tbsp Olive oil

Procedures:

Put olive oil in a small squeeze bottle.  Package all the remaining ingredients, except the pita, in a plastic bag.  When ready to eat, open the pita to form a pocket.  Slice or "string" the mozzarella cheese.  Layer cheese and pepperoni in pita.  Sprinkle Parmesan cheese and herbs over top and squirt with oil.
